Today I'll be going to the 9th Annual Spectacular Bridal Event (what a long name!) @ The Crowne Plaza which is where we'll be having our reception! So ironic :-) My sister Jess (my MOH) and my sister-in-law Nicole will be coming with me. A few of my other bridesmaids may be meeting up with us later. I'm excited to see the fashion shows and will be looking to meet potential vendors for transportation, tuxes, and maybe flowers. Maybe I'll win something!

It’s beginning to look a lot like Thanksgiving! Last week I made a pumpkin pie! Probably my favorite dessert for the holidays (though, cherry cheesecake is a close second). I used a can of Libby’s Pumpkin and followed the simple recipe on the can. I thought the recipe called for a bit too much clove, but my Dad loved it so I guess that means it was good!
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 1 unbaked 9-inch (4-cup volume) deep-dish pie shell
- Whipped cream (optional)
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
POUR into pie shell.
BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.
We’re excited to announce that we’ve booked our videographer David Bettencourt! After interviewing 4 videographers, we knew David was the one. We loved his sense of humor – felt like we were chatting with a friend the whole time! He teaches Film at three local colleges, he graduated from our Alma Mater (URI) and really knows the art of cinematography. I am in love with one of his highlight reels “Erica & Daryl”…it was shot with the Canon 5D Mark II…I think the scenes in this reel coupled with the chosen song make it an amazing, classic, timeless highlight, something this couple will look at for YEARS to come. We want the emotion of our day captured in a cinematic, unobtrusive way and we know David will truly deliver.
Another interesting tidbit: David was the Director/Producer for “You Must Be This Tall”: The Story of Rocky Point Park which spent seven weeks at the Showcase Cinema in Warwick, Rhode Island. (COOL!) Rocky Point holds a special place in our hearts, having grown up in Rhode Island. Both our families used to take us here in the summer…I miss those days!
We look forward to seeing more of David’s incredible work and are counting down the days until he films our special day!
